(sorry for the picture, I scooped it poorly when I took it out of the oven and it broke apart)
This is sort of like a pizza, but the base is grated potatoes. You can put whatever you want on it, I am loving broccoli, spinach and green beans right now, so that is what I used. The inspiration for this came from Strands of My Life - http://www.strandsofmylife.com/potato-rosti-pizza/.
Ingredients
2-3 medium potatoes
1 tbsp Earth Balance (or other oil such as garlic oil if you wish)
2 small tomatoes
1/2 cup green beans
1/2 cup frozen spinach (or 1 cup fresh)
1/2 cup broccoli
1/2 cup Daiya (not necessary, but it is tasty)
Mixed herbs and salt - I used basil, oregano and thyme with some sea salt
Directions
Preheat oven to 350C.
Grate the potatoes, rinse them in water, drain them, squeeze out the liquid and pat try (can use a paper towel if you wish).
Melt the Earth Balance in a frying pan on medium high heat and add the grated potatoes. Cook for about 5-10 minutes until well cooked through and browned. You can try to do a large patty with it if you wish, or just scramble it. In my opinion it tastes the same either way.
Once the potatoes are cooked, spread them out into a round base about 3/4" thick on a cookie sheet lined with parchment paper or a silicone mat. Add the vegetables, sprinkle with the salt and herbs (to taste), and add the Daiya on top.
Bake the "pizza" for about 15-20 minutes until the Daiya is melted and the veggies are cooked. May need slightly longer depending on which vegetables you use.
Once removed from the oven, gently lift servings of the "pizza" on
